Resolutions, if I Have to: Kale Chips

I’ve never been much for making resolutions in January. I find the beginning of October a much more invigorating time for making grand gestures. January may have a new four-digit number after it, but really, what’s motivating about January besides that? The weather is still stuck in a perpetual slump, and me, I’m usually caught in some jetlag horror that pushes sleep way up to the top of the life goal list. This year, a lingering illness and late start back to work made my early January a less-than-inspiring start to 2015.

But for all that, I’ve really managed to make a lot of resolutions this year. And just as I type that, I swear to you, the gray clouds are breaking up and a bright blue sky is swinging into view. So maybe that’s a sign. (On a side note, the plus side to never seeing sun is that you never really know how dirty your windows truly are. Maybe I should add Windexing to the resolution list…

So here are my 2015/rest of my life resolutions:

Live more unplugged – or, live plugged in, but conscientiously During the second month I lived in Berlin, I spilled a drink into my laptop and broke it. I was living in a new city, I knew almost no one. The internet was my crutch. I panicked until I realized this was probably the perfect opportunity to really do the things I’d moved to Berlin to do – read, write, and cook. Computers are totally great, but they make us approach multitasking in the worst possible way. A computer allows you to work in multiple windows at the same time. You can check email, write a blog post, nose around on Facebook, listen to iTunes and edit photos all at the same time. » Continue reading this post...

Show Me the Green: Wilted Kale with Feta and Fried Egg

Apparently I have a reputation for really liking kale. I don’t know where it came from or what I’ve done to start it, but my love is apparently well known. I’m not ashamed. I do love kale. I’m hitting the talking-about-kale bandwagon a bit late. According to the internet, kale’s trending days have come and gone – it’s so last year’s green. (Although The Guardian seems to think that kale popsicles are going to be big in 2014…) But I don’t love food because it’s trendy; I love it because it’s delicious. I love the way crisp and chewy kale plays off shaved parmesan, chopped dates and lemon dressing in a raw salad, the way the curled leaves trap salty pancetta bits, the way a kale chip crunches apart in your mouth, or the way a bitter wilted leaf is the perfect foil for chili flakes and a soft, rich egg.

That’s what I want to talk to you about right now. The perfect combination of flavors: The heat of chili, the bite of briny feta, the warmth of a fried egg and the all-things-are-better-with-bacon quality of bacon supported by a base of hearty green. Kale makes all this possible.

I first discovered this magical combination (or at least the basics of it) back in 2009, when this blog was in its infancy and I was just starting to shop and cook regularly for myself. Of course I wrote about my discovery back then, and of course I didn’t have the consideration to write down the recipe. (The gall. The gall.) So I’m making up for the error of my ways now, and sharing a dish that’s seen me through a lot of tight budget days and a lot of lazy lunches. Cheap, tasty, and quick. Kale and potatoes (Eat Me. Drink Me.)

You sit in your apartment, thinking that it’s too cold outside to leave. You don’t understand why North Carolina and New York are the same temperature, or so says weather dot com. It’s not bad, just too many layers to put on before heading out to the grocery store to pick up the last ingredients for your dinner tonight. It’s probably been at least two months since you have seen all of your old roommates together in one space. This dinner is the first of hopefully many gatherings making your friends companions – those who break bread together.

In your cabinet sits the olive oil, salt, pepper, potatoes, and vegetable stock that you need. Your refrigerator cools off the vegetables that you’ll use tonight – some mixed salad greens, goat cheese and tomatoes, as well as some kale from the local organic trade post.

The CD player ekes out soothing notes to fill the room as you return from the grocery store – for some spices you’ve wanted to get anyway. You take off your coat, turn on the stove light, and get ready to start the game of chopping, tossing, mixing, sautéing, baking, plating, and enjoying. First it’s the potatoes – they have to get oiled up and herbed down so that they can sit in the oven for at least forty-five minutes. Then it’s the water for the pasta. You think, starches are always a good thing for dinners. Not always, but for big parties, for sure. Next it’s the kale. You pull out the new cookbook your grandmother thoughtfully gave you for Christmas. Normally you don’t follow recipes, but tonight you think it has to be special. » Continue reading this post...
