When the guests have gone, and all that’s left is a looming pile of dirty dishes and a turkey carcass, that’s when the fun really starts. The leftovers are packed into containers, and each one lovingly, religiously hauled out of the refrigerator for the next few days for breakfast, lunch and dinner. Sandwiches, soups, pot pies… The feast is re-formed. It has a new lease on life.

Ciabbata with olives (Eat Me. Drink Me.)

Turkey and stuffing (Eat Me. Drink Me.)

It becomes a sandwich: Toasted olive ciabatta with shredded sage and pancetta roasted turkey, spinach-fennel stuffing, candied yams, and tart cranberry relish.

It becomes a very non-conventional one-pan dish: Truffle-butter pasta, brioche stuffing made with spinach and fennel, and a lone tomato stuffed with ground beef and cheese, topped with cranberry relish.

It becomes: excitement for the next holiday, the next batch of strange and wonderful leftover meals.

    I can’t wait for Christmas leftovers already, but my stomach says you’ll have to leave out a few things for me. As long as everything is smothered in cranberries, it’s good.
